How can I make crispy waffles? I want to make crispy waffles, but every time I try, I end up burning them or just have waffles disk. I use Alton Brown recipe but I can not get them to be crispy. I thought buying an old vintage electric waffle iron would make the general crispy waffles, but it has not yet. I'm pretty sure it cannot be the waffle iron, because it gets really hot so I guess it must be the recipe. Any suggestion to modify the recipe or recipes would be fully appreciated.
Butter your grill with the butter and a pastry brush, make sure you have sugar in your recipe (which also contributes to the browning), long enough to cook and serve immediately. They soften as they sit.
Crispy Waffles
3 large eggs
1 1 / 4 cup milk
1 / 2 cup melted butter
1 tablespoon vanilla
2 cups flour
1 tablespoon baking powder
2 v. teaspoon sugar
1 / 2 c. salt
Method:
In a large bowl, beat the eggs until thickened. Add milk, melted butter and vanilla ... continue beating mixture for 2 minutes. Mix dry ingredients, mix in egg mixture and beat well for 2 minutes. If necessary, add more milk ... dough should be about the consistency of pancake batter.
Brush melted butter on the ridges of a Belgian style waffle iron. Pour batter onto the hot iron and bake according to instructions for manufacturing iron (usually about 2 minutes). Once done, the peaks will waffle is golden brown and crispy.
Top your favorite fresh berries or sliced fruit (strawberries, peaches, poached pears, apples, cinnamon, etc.) and whipped cream. Just before serving, sprinkle powdered sugar on waffles.
Yield: 6-8 waffles depending on the size of your waffle iron.
Light, Crisp Waffles
Ingredients
* 3 / 4 cups all purpose flour
* 1 / 4 cup cornstarch
* 1 / 2 teaspoon salt
* 1 / 2 c. teaspoon baking powder
* 1 / 4 c. teaspoon baking soda
* 3 / 4 cup buttermilk
* 1 / 4 cup milk
* 6 tablespoons vegetable oil
* 1 egg yolk
* 1 egg white
* 1 tablespoon white sugar
* 1 / 2 teaspoon vanilla extract
Instructions
1. Preheat oven to 200 degrees F (95 degrees C). Heat your waffle iron.
2. In a medium bowl, stir together flour, cornstarch, salt, baking powder and baking soda. Combine milk, buttermilk and oil in a measuring cup. Whisk egg yolk with a fork and set aside. In a small bowl, beat egg whites with an electric mixer until soft peaks form almost. Gradually sprinkle in sugar, while continuing to whisk until thick and shiny. Stir in vanilla.
3. Pour milk mixture into dry ingredients and mix just until blended. Stir in egg white using a spatula.
4. Pour the batter into the waffle iron hot in the recommended amount for your iron. My waffle iron is a generous 1 / 2 cup. Close iron and cook until golden brown. A good indication that it is close, it is no more steam out of iron. Keep finished waffles warm in the oven directly on the grid. Do not stack, or they become soggy.
