Banana Bread MixBanana Bread Recipes for Diabetics

Back to school and fall season call to highlight the fruit bread recipes. Here are some recipes for banana breads and muffins. All are suitable for diabetics.

ZUCCHINI-Banana Bread

1 Egg Substitute

2 cups of sugar equal-Lite

3 / 4 cup canola oil

1 / 4 cup unsweetened applesauce

2 medium enterprises ripe bananas mashed (1 cup)

2 cups all purpose flour

1 cup whole wheat flour

1 1 / 2 tsp teaspoon baking powder

1 1 / 2 tsp teaspoon baking soda

ground cinnamon 1 1 / 2 c. Tea

1 / 2 c. salt

1 1 / 2 cups grated zucchini peeled

1 cup chopped pecans

In a large bowl, beat eggs. Mixture opportunities, applesauce and oil in the eggs. Add bananas and mix well. Combine flour, baking powder, baking soda, cinnamon and salt. Stir in flour mixture to egg mixture. Stir in zucchini and pecans just until well blended. Pour batter into two greased loaf pans 9 ". Bake at 350 degrees for 50 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan and cool completely on rack.

Walnut Bread BANANA

3 large ripe bananas

1 egg or 1 / 4 cup egg substitute

1 / 2 cup unsweetened applesauce

1 / 3 cup low fat milk

1 / 3 cup sugar or Splenda baking

1 tsp tea. salt, optional

1 tsp tea. baking soda

1 / 2 c.. yeast

1 cup all-purpose flour

1 / 2 cup whole wheat flour

(Or you can use 1 1 / 2 cups all purpose flour)

1 / 2 cup chopped walnuts or pecans

Preheat oven to 350 degrees. Mash banana with a fork. Add egg, applesauce, milk, sugar or Splenda, salt, baking soda and baking powder to the banana. Stir well with a fork. Slowly add the flour. stir until flour is moistened. Stir in chopped nuts. Lightly grease a loaf pan with cooking spray. Pour batter into prepared pan. Bake 45 minutes or until a toothpick inserted in center comes out clean. Allow to cool for 5 minutes before removing to a cooling rack.

Chocolate muffins banana chips

3-4 large bananas, ripe and mashed

3 / 4 cup Splenda Granular

1 / 4 cup egg substitute or 1 egg

1 1 / 2 cups flour

1 tsp teaspoon baking soda

1 tsp teaspoon baking powder

1 / 4 c. teaspoon salt, optional

1 / 3 cup melted butter

1 / 4 cup mini chocolate chips

Preheat oven to 375 degrees. In a large bowl, combine bananas, sugar and egg or egg substitute. Add flour, baking soda, baking powder and salt. Mix well. Stir butter and chocolate chips. Fill paper lined muffin tins to 2 / 3. Bake at 375 degrees for 15-20 minutes.
