I was looking for a couple hours and I can not find one that is healthy (low carb, low fat) that uses pecans (I prefer pecans to almonds and things if you can help it would be appreciated Thank you) I do not think there is such a thing. Pineapple Banana Bread
3 cups flour 2 cups sugar 1 tsp tea. baking soda 1 tsp tea. cinnamon 1 cup chopped nuts (walnuts, pecans or macadamia nuts) 2 v. tea. vanilla 3 eggs, beaten vegetable oil 1 1 / 4 cups 2 cups mashed bananas 1 (8 oz) Can of crushed pineapple (well drained)
In a large bowl, combine flour, sugar, baking soda and cinnamon and stir in nuts. Set aside. Combine remaining ingredients in another bowl, mix well. Pour the wet ingredients to dry ingredients and stir until just moist. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for about 1 hour 30 minutes. Ensure that the center of bread with toothpick (I use uncooked spaghetti strand) and if it comes out clean, its done. Cool 10 minutes before turning out. Then hire armed guards to keep the bread until it is safe to eat. Good dough You can not really have a carb "low" banana nut bread when you use 2 cups of flour in the recipe.

2 cups all purpose flour 1 1 / 2 tsp teaspoon baking soda 1 / 2 teaspoon salt 4 ripe bananas 1 cup sugar 3 / 4 cup (1 1 / 2 sticks) unsalted butter, melted and cooled 2 large eggs 1 teaspoon pure vanilla extract 1 / 2 cup finely chopped pecans Confectioners sugar, for dusting
Preheat oven to 350 degrees F. Lightly grease and 9 by 5-inch loaf.
In a large bowl, combine flour, baking soda and salt and set aside.
Mash 2 bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a whisk, beat the other bananas and sugar for 3 minutes, and you want a banana cream light and fluffy. Add melted butter, eggs and vanilla and beat well and scrape sides of bowl. Mix dry ingredients just until incorporated in, no need to overmix. Stir in nuts and mashed bananas with a rubber spatula. Pour batter into prepared pan bread. Give the pan a rap firmly on counter to get any air bubbles.
Bake for about 1 hour and 15 minutes, until golden and toothpick inserted in center comes out clean. Do not be nervous if the banana bread develops a crack in the center of the loaf, this is not an error, it is typical. Rotate the pan periodically to ensure even browning.
Cool bread in pan for 10 minutes, then unmold onto a rack to cool completely before slicing. Toast the slices of banana bread, sprinkle with icing sugar and serve. Posted on June 26, 2010.
